This is a fairly comprehensive list of ore veins, their requisite skill levels, the items they contain, and their approximate geographic locations. It is by no means completely comprehensive, so keep that in mind. In addition to their mining skill requirements, all Northrend mining nodes require level 65 to mine.

Notes

If an engineer has a [Electrostatic Condenser], they have a chance of obtaining 1-2 [Volatile Air] from any Cataclysm Cataclysm mining node; this is not included in the totals. The chance and yield seems to be roughly equal for any node type.

Patch 2.4 appears to have adjusted the possible additional items for Adamantite Deposit, Rich Adamantite Deposit, and Nethercite Deposit. The chance of getting an uncommon raw gem has been removed (or drastically lowered) and replaced with the chance to get a rare raw gem. Further research is needed.

Patch 3.0.8 Mining veins and deposits no longer require multiple hits to receive all the ore. Players will receive around the same amount of ore, stone, and gems they would have received from multiple hits.

Miners can also smelt to gain skill ups. (Multiple miners can skill up on the same ore node as long as the ore/gems/items are not removed; "tap" the node (click on it to begin harvesting)...giving the first player a chance to skill up... then have the additional players do the same. As long as no one loots the node, as many people as need be can gain 1 skill up attempt).
